Known as the “stem turnip,” the turnip-like tuber is actually an enlarged stem 1–3” above ground. Flesh is white or purple, sweeter than other cabbage family members. Can be eaten raw in salads, added to soups, grilled, or made into fritters.

Sowing:

Plant seed outdoors early in spring as soon as soil can be worked.
Space seeds 3–4” apart.
Seedlings do not transplant well—plant where they will remain.
Cover with ¼” of fine soil and water well.
Thinning:

When plants are 2” tall, thin to stand 6–8 inches apart.
Eat your thinnings!
Germination:

1–12 days depending on soil temperature and moisture.
Remarks:

For microgreens: plant seed thickly and harvest at 2” tall.
The name “Kohlrabi” means “cabbage turnip” in German.
