Summer Savory
Satureja hortensis

Annual – Height: 12–18 inches

This annual herb has a sweet, peppery taste. Serve with potatoes, beans, soups, and stews. When grown next to beans, it is purported to keep bean beetles away. Serve with fresh-from-the-garden string beans to complement their flavor.

SOWING:
Sow in full sunlight in early spring. Plant seeds ¼ inch deep in well-drained soil.

THINNING:
When plants are 2 inches tall, thin to 6 inches apart each way.

GERMINATION:
Germinates in 8 to 12 days depending on soil and weather conditions.

REMARKS:
To develop strong flavor, harvest leaves before flowers develop. To dry for winter, cut on a bright day and dry quickly in the shade. Store in airtight jars.
